Raspberry and almond butter ice lollies

Last summer before Rob and I went away, we spent most of the sunny days in our garden hosting BBQs for family and friends.

While I admit that the UK doesn’t get as hot as some other countries, you have to trust me when I say hot weather here can be a struggle! Our homes are designed to keep the heat in, there’s hardly any aircon anywhere and the humidity makes everything extra sticky. So to combat this, I wanted to make some homemade ice lollies to share.

I’d been having a bit of an almond butter moment. And with the raspberries particularly juicy as they were in season, thought it would be a winning combination. They’re super quick and easy to make and only contain four ingredients! The most difficult part is not eating the mixture out of the bowl and actually getting it into the freezer.

If you’re looking for something cold and fruity but still rich and satisfying, you’ll love these raspberry and almond butter ice lollies. They’re refined sugar free, completely vegan and kid friendly too!

Equipment

I bought a super handy 12 hole ice lolly mould from Amazon to make these in. The container is silicone so it makes releasing your lollies a breeze, it comes with reusable sticks and is the perfect height to stand in a freezer drawer.

When filling the moulds, leave a small gap on top to allow the mixture to expand so it doesn’t overflow. And then once they’re frozen, you can push from the bottom and pull the stick on top for easy release.

Description

Ingredients

Scale
  • 300 grams raspberries
  • 3 tablespoons maple syrup
  • 150 grams almond butter
  • 300 grams coconut yogurt

Instructions

  1. Wash the raspberries and pop them in a bowl along with the maple syrup. Mash roughly together.
  2. Add almond butter and mix gently. Then add the coconut yogurt and gently swirl until evenly distributed.
  3. Spoon into 9 lolly moulds, add the stick and freeze for 8 hours or overnight. 

Notes
