I’m back and I bring chicken

After a little time away from the blog (ok a lot), I’m finally back and I couldn’t think of a better recipe to offer my apologies for disappearing with than this one. These lemon honey mustard chicken thighs have been on heavy rotation in my kitchen lately, and honestly? They deserve their moment in the spotlight.

10 minutes of prep, 35 minutes in the oven and you’ve got something that tastes like you tried a lot harder than you did. That’s my kind of weeknight dinner!

So, what goes into this dish?

The marinade is where the zesty and sweet flavour lies. Wholegrain mustard brings a gentle heat and texture, honey adds just enough sweetness to balance it out and the lemon zest cuts through everything, lifting the flavours and making the dish feel light. Fresh thyme ties it all together and the combo of ingredients will make your kitchen smell incredible while it roasts.

Chicken thighs are the key here. Skin-on for maximum flavour and that gorgeous crisp caramelisation you can see in the photos. They’re also far more forgiving than chicken breast, which makes them perfect for a busy weeknight when you’re not hovering around the oven.

To show how extra sorry I am, I’ve not only bought you one new recipe but two! Check out my butternut squash and goat’s cheese salad to accompany this dish. I created it to pair perfectly with these chicken thighs and is a combination I’ve been making on repeat.

Description

Juicy, zesty and sweet, these lemon honey mustard chicken thighs are an excellent weeknight dinner paired perfectly with a tasty salad.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 3 tablespoons wholegrain mustard 
  • 3 tablespoons honey
  • 1 teaspoon chopped fresh thyme and 6 sprigs 
  • 2 lemons, zest and 1 tbsp juice
  • 6 chicken thighs, skin on
  • Parsley

Instructions

  1. Preheat your oven to 200C / 180C fan.
  2. Mix together the olive oil, wholegrain mustard, honey, 1 teaspoon of fresh thyme, lemon zest and juice in a large bowl. Add the chicken and stir to coat. 
  3. Place the chicken thighs skin side up in a baking dish, pouring over any leftover marinade and scatter over the thyme sprigs. Roast for 30 – 35 minutes, basting with the marinate halfway through, until the skin is crispy and the chicken is fully cooked. 
  4. Remove from the oven and scatter over the chopped parsley. Serve with roasted new potatoes and veggies or a big salad.
