The easiest meal prep, overnight oats make your mornings so much quicker. Being a big porridge lover, I’ve been playing around with different overnight oats recipes for years. As they all tend to lean towards tastes suited for cold weather, I set about making a summery version.
Enter mango chia seed and coconut overnight oats. These oats are bursting with fresh flavours with the succulent mango being the star. Mixing three different types of coconut including coconut milk, coconut yogurt and desiccated coconut, these oats are extra creamy and indulgent. The chia seeds give an interesting texture which I love!
Vegan and dairy free, these overnight oats also contain 10 grams of protein. And they’re so simple to make. Chuck all your ingredients in a container, leave in the fridge overnight and then take out and enjoy in the morning.

How long do overnight oats need to soak?
Soak your overnight oats for at least six hours in the fridge to allow the oats to soak up the liquid.
Do you eat overnight oats warm or cold?
I take my overnight oats out of the fridge half an hour before I eat them so they can warm up a little and aren’t fridge cold. If you prefer your oats warm, you can pop them in the microwave or in a saucepan over a low heat until warmed through.
How long will overnight oats keep in the fridge?
With this overnight oats recipe, I’d recommend eating within two or three days. The longer you leave it the softer the mango will become and personally, I prefer my mango a little firmer.

Ingredients
- 40 grams oats
- 10 grams desiccated coconut
- 10 grams chia seeds
- 1 teaspoon cinnamon
- 100 grams mango, cubed
- 150 ml unsweetened coconut milk
- 50 grams coconut yogurt
- 5 grams maple syrup
Instructions
- Add the oats, desiccated coconut, chia seeds and cinnamon in a container and mix together.
- Add the mango, coconut milk, coconut yogurt and maple syrup to the oats and stir until combined.
- Leave in the fridge overnight and in the morning take out to warm slightly half an hour before digging in.
