Hands up who’s not a fan of artificial flavours? My hand is firmly in the air about that.
I really really really hate artificial flavours. And my struggle with them has always made finding a decent protein powder a huge challenge. Vanilla flavoured, no thanks. Strawberry versions, oh gross. Banana anything, I’d really rather not. Chocolate fakery, how can you ruin the flavour of chocolate?!

Testing, testing
Onto the pancakes themselves. I’ve tested these pancakes so many times (much to Rob’s delight) in a bid to find the perfect ratio of oats to protein powder to liquid and I think I’ve come out with the perfect combination.
They’re chocolatey without overdoing it, puff up nice and fluffy while they cook and contain a whopping 38 grams of protein! Personally, I like to add half of my blueberries straight to the batter and scatter the other half on top once cooked.
Served with greek yogurt and a drizzle of maple syrup, they’re my post-workout meal of dreams.

Chocolate and blueberry protein pancakes

Description
Containing a whopping 38 grams of protein, these chocolate and blueberry pancakes will set you up for the day. Perfect as a morning treat or post gym, they’ll satisfy your sweet tooth and fill you up.
Ingredients
- 100 grams oats
- 60 grams chocolate protein powder
- 2 teaspoons cocoa powder
- 1 teaspoon bicarbonate of soda
- 2 large eggs
- 220 ml almond milk
- 160 grams blueberries
- 2 teaspoons coconut oil
- Greek yogurt
- Maple syrup
Instructions
- Blend the oats, protein powder, cocoa powder, bicarbonate of soda, egg and almond milk together. Gently stir the blueberries into the mix once blended.
- Heat the coconut oil in a frying pan on a medium/high heat and cook your pancakes in batches as big as your frying pan will allow without crowding the pan. To do so, spoon one big tablespoonful of the mixture into individual mounds in the hot pan and cook for a few minutes on one side. When you see bubbles start to form on the uncooked side, flip the pancakes over and cook for another minute.
- Once cooked, stack your pancakes and top with yogurt and maple syrup.
Notes
If you have time, rest your batter for 5 minutes before frying – I find it makes the pancakes rise better
